Nel cercare immagini adatte (ed invitanti) per l’articolo di ieri sui benefici dei cetrioli, mi sono imbattuta in un sacco di ricettine facili e poco conosciute, per lo più della cucina asiatica. Visto che ultimamente sto sperimentando spesso con la cucina giapponese, mi sono diretta verso le proposte del Sol Levante, decidendo infine per il Kyuri No Sunomono, un’insalatona che oltre al cetriolo comprende anche alghe wakame, semi di sesamo e una particolare vinaigrette.
Si tratta di una ricetta adatta a diversi tipi di diete, dalla vegetariana (ovviamente) a quelle con l’intento di dimagrire (le calorie sono veramente pochissime).
Ecco la ricetta, fatemi sapere se avete intenzione di provarla!
Kyuri No Sunomono
- 2 cetrioli
- 30 g alghe wakame disidratate
- 20 g semi di sesamo tostati
- 15 g sale
Per il sanbaizu (vinaigrette)
- 2 cucchiai di aceto di riso (o aceto di mele)
- 1 cucchiaino di salsa di soya
- 1 cucchiaio di zucchero
- 1 pizzico di sale
Verdura
- Immergere in acqua le alghe wakame fino a che non diventano morbide.
- Lavare i cetrioli e tagliarli a fettine sottilissime.
- Immergere i cetrioli in una terrina d’acqua con un cucchiaino di sale, per circa 5 minuti, e scolare eliminando più acqua possibile.
Sanbaizu
- Mescolare gli ingredienti fino a che lo zucchero non è completamente sciolto.
Per servire
- Mescolare in una terrina alghe e cetrioli, ricoprire con i semi di sesamo e condire con il sanbaizu.

Non sarebbe male anche in versione più italiana con cetrioli, sesamo, olio d’oliva e magari un pochino di tonno “riposato” nella salsa di soia. *_* Ok, mi sta venendo fame.

Ho provato la vinaigrette in un’insalata “all’italiana” (cetrioli, carote e lattuga) e viene bene lo stesso! Semplicemente viene dato un gusto diverso alla verdura 🙂
