Se mi seguite su Facebook avrete notato una rubrica nuova questa settimana: sull’onda dell’articolo sui cocktail a prova di dieta, che sembra aver riscosso un buon interesse, ogni giorno vi ho postato una ricetta diversa, rigorosamente light. Quella che vi propongo oggi, tradotta, è la “vincitrice” della settimana: non necessariamente quella con più commenti, ma quella che complessivamente ha destato più attenzione, per click, condivisioni e “Mi piace”.L’autrice è Gina, blogger di Skinny Taste, e la ricetta che propone è una variante leggera e salutare alla classica colazione all’americana con frittata e bacon. Di certo per noi sarà più adatta per pranzo o snack di metà pomeriggio!
Crostini con Frittatina e Pomodorini
- 2 muffin integrali (tagliati a metà o 4 crostini, a scelta)
- 1 cucchiaino di olio d’oliva
- 8 bianchi d’uovo (sbattuti)
- 4 gambi di porro (tagliati finemente)
- sale e pepe (a gusto)
- 50 g di formaggio morbido a basso contenuto calorico (es. Fontina, Scamorza o Taleggio)
- 60 g di pomodorini (tagliati a metà)
- Con una tostiera o su una padella ben calda, scottare le fette di muffin (o crostini) per un paio di minuti, su entrambi i lati.
- Soffriggere per 2-3 minuti il porro su una padella con poco olio.
- Aggiungere i bianchi d’uovo sbattuti, sale e pepe, e mescolare il tutto fino a che non è cotto.
- Dividere la frittatina sui 4 crostini, e decorare con i pomodorini, il formaggio e il resto del porro, non ancora cotto.
- Scottare quindi i crostini sulla pentola ancora calda, fino a che il formaggio non si è fuso.
